steak deliverySteak Delivery: The Chicago Steak Company is yet another mid-west retailer specializing in grain-fed beef products.  The focus is on well marbled, feed-lot production beef which most households are familiar with.  They offer USDA choice, and USDA prime graded beef which is typically wet-aged a minimum of 28 days, but usually in the 35 to 40 day range.  This undoubtedly makes for a very tender cut that can be grilled in minimum time.

The choice and prime grades are vacuumed sealed and flash frozen.  However, they also offer an ultra premium product called "5 Star Select".  These are USDA prime cuts that are hand trimmed and never frozen, but shipped fresh.

Prices are typical for the standard grain-fed product: e.g.  While, Filet Mignon ranges from $50 to $70 per pound depending on whether its graded USDA Choice or Prime, sales prices for this cut can run as low as $30 per pound.
