The choice and prime grades are vacuumed sealed and flash frozen. However, they also offer an ultra premium product called "5 Star Select". These are USDA prime cuts that are hand trimmed and never frozen, but shipped fresh.
Prices are typical for the standard
grain-fed product: e.g. While, Filet Mignon ranges from $50 to
$70 per pound depending on whether its graded USDA Choice or Prime,
sales prices for this cut can run as low as $30 per pound.
