JB Hendry is unique in providing both a wet-aged and the harder to find dry-aged beef cuts. The dry-aged process requires that beef sides are hung in chilled, climate-controlled coolers, which allows moisture to evaporate slowly and evenly from the beef. This concentrates the flavors, and yields a complex, steak-house taste-experience to the product. They also offer the more common wet-aged product.
